TRADITIONAL FAST FOOD CHAINS have lost some favour of late, but burgers have never gone out of style. Even fine dining restaurants are reviving interest in hamburgers by offering slider plates and gourmet burger offerings that are focused on quality rather than quantity.
One of Nova Scotia’s most celebrated chefs, Tahir Salamat, who is Corporate Chef for the RCR Hospitality Group, has created a gourmet burger menu for the Urban Grill, located underneath CUT Steakhouse. The menu features burgers with such delectable toppings as foie gras and house-made truffle mayo.
Aside from the toppings, according to Salamat the reason the burgers are so good is, “We don’t really add anything to ‘dress up’ the ground beef we use for our burgers. We want it to speak for itself. That’s why we use only high quality Kobe beef. A splash of dark miso and sake gives it an earthy flavour and a gentle sweetness, but it’s the true flavour of the beef that really shines through.” This summer create your own unique burgers.
